I just picked this beauty up today. Well-balanced, sharper
than sin, and the blade just sings on the sharpening steel.
I'm a self-taught home-gourmet, and having great knives makes
the stuff that
Jean-Louis Palladin and
Andre Soltner pull off just a little more attainable at
home.
Is paying this much for a knife a terribly yuppie-scum thing
to do? Yeah, it is, so sue me. Hey, at least I don't own an
SUV.
